With so many upcoming holiday events, it’s easy to succumb to rich, high calorie dishes. Why not take a break from the heavier foods and serve up a light and delicious dish? This main course salad combines roasted chicken with rich nuts and tart cherries in a walnut oil-balsamic vinaigrette.
3 large roasted chicken breasts, cut into bite-size pieces (about 3 ½ cups)
¾ cup roasted chopped walnuts
½ cup dried cherries
1 Belgian endive, thinly sliced
¼ cup roasted walnut oil
2 tablespoons balsamic vinegar
Black pepper to taste
Smoked salt to taste
Frisée lettuce for serving
Method: Place chicken, walnuts, cherries and endive in a large serving bowl. In a small bowl, whisk the walnut oil into the balsamic vinegar and season with black pepper. Pour the vinaigrette over the chicken mixture and toss well to coat. Season the chicken with smoked salt and toss gently to combine all of the ingredients. Serve over a bed of frisée lettuce.

Fantastic Food Trucks
If you’ve seen the food trucks around Atlanta, you’ve no doubt noticed Yumbii and its fantastic international fare. Yumbii’s menu includes tacos, sliders, quesadillas and burritos made with signature seasoned meats, fish tacos, sesame fries and additional weekly specials. To better serve guests at two different locations, Yumbii has become Atlanta’s first food truck to acquire a second vehicle for its fleet. You can find both trucks dolling out delicious dishes at Midtown’s Street Food Thursdays, hosted by the Atlanta Street Food Coalition. The food trucks will be parked at Callaway Plaza, located on the corner of Peachtree and 15th Street. Yumbii is available Monday - Saturday for lunch from 11 a.m. - 2 p.m. and Monday – Friday for dinner from 6 p.m. - 10 p.m.
