While the weather gets warmer, consider trying some cold, refreshing soups to help usher in the summer months. Don’t think that chilled soup is your forte? Jenny Levison, owner of Souper Jenny, recommends starting simple with a bowl of Gazpacho. “In my book, Gazpacho is the perfect summer soup,” she says. The recipe she shares here uses no oil, “so it’s great for those watching their diets,” she adds.
2 red bell peppers, cleaned,
cored and chopped
2 green bell peppers, cleaned, cored and chopped
2 yellow bell peppers, cleaned, cored and chopped
2 European cucumbers, diced
1 bunch cilantro, rinsed, removed from stem and chopped
1 jalapeno, seeded and chopped
2 46-ounce bottles of V-8 juice
salt and pepper
Instructions: Combine all ingredients in a large glass bowl or plastic tub and marinate overnight. With a hand blender, puree to desired thickness. Add salt and pepper to taste.
