For Day 10 of 30 Days of Pink, we decided to shake things up and do a recipe from Atlanta Home Improvement Magazine‘s Sandi Edelson. These Magic 10 Cookies contain 10 powerful antioxidant ingredients (marked with an asterisk), that are effective in maintaining a healthy diet. Antioxidants have been shown to lower certains risks associated with cancer. They are also delicious!
*1/3 cup canola Oil
1 cup brown sugar (light or dark)
½ teaspoon baking powder
¼ teaspoon baking soda
*1 ½ teaspoons cinnamon
*1 teaspoon ground ginger (or to taste)
*1/4 teaspoon ground cloves
¾ teaspoons salt
2 teaspoons vanilla extract
1 large egg
2 tablespoons maple syrup or dark corn syrup
*1 cup grated carrots
*1/2 cup dried cranberries
*1/2 cup semisweet or bittersweet chocolate chips(can be omitted)
*1/2 cup blanched slivered almonds (toasted at 350 degrees in oven for 10 minutes) Cool and roughly chop into halves.
*1 cup White whole wheat flour (King Arthur brand is non GMO)
*1 ½ cups quick rolled oats
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.In a large bowl, mix first 10 ingredients, beating well. Add syrup and carrots, cranberries, chocolate, nuts and mix well, then stir in flour, then oats.Drop tablespoon sized balls of dough, leaving about 1 ½” between the cookies. Bake about 12 minutes. Remove from oven and cool on cookie sheets. They will be very soft. Don’t try to transfer them until cool. Store cookies in a covered container, with parchment or waxed paper between the layers to avoid sticking. About 30 cookies.
