Basic prep: Rinse, peel and dice the beets. Wrap them in tinfoil and place them in a baking dish. Roast the beets at 400 degrees F for 45 to 60 minutes. They will come out fork tender and sweet, ready to be served with your favorite soft cheese or added to a green salad.
