Recipe to Try: Pickled Shrimp

1 lb. medium or large shrimp, peeled and deveined

2 Tbsp. seafood seasoning or Old Bay

1 tsp. Nature’s Garden Cajun Seasoning

1/2 tsp. Nature’s Garden Pickling Spice

1 cup extra-virgin olive oil

1/2 cup fresh lemon juice

2 Tbsp. white balsamic vinegar

1/4 cup flat parsley leaves

1 Tbsp. kosher salt

1/2 tsp. black pepper

3 cloves garlic, finely chopped

6 fresh bay leaves

1 sweet onion, sliced lengthwise

Fresh rosemary and thyme


Bring 2 quarts of water to a boil with the seafood seasoning. Add the shrimp and cook until done and pink, about 2 minutes.

Remove shrimp and cool in ice water to stop the cooking process, then drain.

Add the Cajun seasoning and pickling spice to a bowl and stir in the oil, lemon juice, parsley, salt, garlic, bay leaves and herbs.

In glass jar or bowl, mix the shrimp and onions, then pour over oil mixture.

Cover and chill overnight before serving.
